“Just because I’m awake does not mean I’m ready to do things.”

indexI have a good 5 hour window for people to talk to me during the day…catch me between noon and 5pm. Or forget it. This might be a slight exaggeration. Slight. I’m working on this. Someday, I hope to be social until 6pm! What a day that will be.

Enough wallowing! Here are some recipes for the week. There should be something for everyone here. I know it’s a commitment, but nothing beats home cooking.

Monday: Coconut Curry with Almond Butter (vegan and paleo)


Tuesday: Spicy Turkey & Zucchini Burgers (gluten free; can be dairy free if you replace the sour cream and yogurt for coconut cream, or a dairy free yogurt)


Wednesday: Steamed Butternut Squash over quinoa with Southwestern Tahini Sauce (vegan, gluten free)


Thursday: Slow cooker Chicken Parmesan Sliders (can be made dairy free by leaving off cheese, or using a dairy free cheese; can be gluten free if you use gluten free buns)


Friday: Paleo Bang Bang Shrimp Tacos (gluten and free; save time and use corn tortillas and store-bought sweet chili sauce …instead of strictly following the recipe)


Saturday: Easy Thai Peanut Sauce Spaghetti Squash (gluten free and vegan, but you can add chicken to increase the protein, and to make the meal go further….and to appease your meat-loving counterpart)


Sunday: Crock Pot Rustic Italian Beef Ragu (gluten free if you replace the noodles with g-free pasta, and replace the barley for quinoa)


Recipes are just guidelines (except when you’re baking)….feel free to substitute and leave out ingredients you don’t like. For example, for Wednesday’s meal, I plan to sub sweet potato for butternut squash and roast all of the veggies together, instead of creating another step and steaming the potatoes separately. I also use all white quinoa, because I don’t like red quinoa.

I think a glass of Rosé, Pinot Gris, or Carmenère would pair well with dinner tonight. You made it though the day; you deserve it!
